‘Perfect’ fried chicken is bringing people to this Metro Detroit restaurant just to try it

BIRMINGHAM, MI – A Metro Detroit chef used up his time because of the Coronavirus pandemic wisely, by finding what she calls the “perfect” fried chicken. So we went to this restaurant to see if it is really as good as she says it is.

Hazel, Ravines and downtown is located at 1 Peabody St. in downtown Birmingham on the Detroit Underground. Before COVID-19, fried chicken wasn’t even on the menu. This place is known for its fresh seafood. Now the staff are hopeful that the time spent developing their new fried chicken recipe will continue to attract new and repeat customers.

“It’s a neighborhood restaurant,” owner Beth Hussey said. “We do the casual side of seafood really well and it seems people really enjoy it. We get oysters from both coasts directly from farmers, skipping the middleman. It keeps them fresh. Our lobsters are shipped daily from Maine and Canada. We are also known for our burgers and now our fried chicken.

One thing executive chef Emmele Herrold says her fried chicken needed was a dedicated deep fryer in order to keep the cooking oil at a specific temperature.

“We’ve always wanted to make fried chicken and it’s hard to do well, especially if you don’t have the right equipment,” Herrold told MLive. “I kind of came up with the recipe while playing. It came out so well and I was so proud of it. It sold like crazy, so we have a second dedicated fryer.

Fried chicken has about 10 different seasonings in the flour, including black and white pepper. Chicken is also completely natural.

“The quality of the chicken, combined with the simple and not overly elaborate recipe, makes our fried chicken so good,” Herrold added. “There are a lot of spices in the flour. I’m not shy about spices.


We tried the fried chicken dinner at dinner. It comes with four pieces of chicken, corn on the cob, buttered boiled potatoes, and a butter roll. For $ 18, the serving size was more than enough for a hungry person. Much to my palate’s surprise, this was one of the best chicken breasts I have ever eaten. It was crispy on the outside and tender and juicy on the inside with lots of flavor. There really is no spice or kick in the chicken. White and black pepper is prominent, but not overwhelming. I didn’t find it salty either. It was simply tasty. Overall, while nothing is really “perfect” this is one of the best fried chickens I have had.

For dessert, we tried this homemade whoopie pie. It only takes two people to share. If you are not familiar with this type of dessert, the best way to describe it is that it is a chewy cookie / pie / cake sandwich.

Like all Michigan restaurants due to COVID, dinner is limited, although this restaurant has plenty of space to accommodate people with a lot of social distancing. You can also get different sizes of chicken buckets for delivery or sidewalk delivery.

Saturday from 11 a.m. to 10 p.m. (Brunch until 2 p.m.)

Sunday 11 a.m. – 9 p.m. (Brunch until 2 p.m.)
